Dutch wines and Ilse Roelof
Until recently it was impossible to produce wine in the Netherlands. There were only initiatives that resulted in making vinegar. By coincidence researchers discovered ten years ago, the grape and John Itter Solaris. During an investigation it was proved they where far too early ripe and contain too much sugar. The varieties are unsuitable for hot climates and suddenly there was a new opportunity for the Netherlands. Stubborn Dutch farmers grow grapes and with astounding success, these wines get many international prices. We were really amazed about the quality. We find the best winery 't Hof van Twente. Roelof and Ilse runs a small winery, they started 10 years ago on their own 5 acres of vineyards. They are still small but growing fast.
Bread Amerongse Maal Lust
Amerongen (the Utrecht Hills) owes its origin to its stately castle Amerongen. This medieval village has a historic windmill. The two millstones are maintained by volunteers. Especially for Roots miller Hans Gijsbers grinds grain from local farmers. Roots bakes the bread, it's served with Dutch butter just before your dinner.
Mustard Doesburg 
The oldest factory in the Netherlands, Doesburg Mustard company (1457). They still produce a traditional Dutch mustard here. So a centuries old product. The manufacturing is simple. In a millstone they grind the mustard seeds with vinegar. The mustard is served in the Dutch cheese platter and incorporated into our homemade mayonnaise
Cheese platter (Dessert)
Cheese production went abroad because a largerscale of production. Small-scale farmers are now producing more special cheeses. They experiments in different ways and leads to very special flavours. On the platter we serve a 3 year Old Amsterdammer cheese. The mesklever is a soft cheese, we have also exciting Blue cheeses of Zealand
Meat from Dutch soil
The market of meat is also has to do with scaling to forgein countries. Our farmers are forced to go for the ultimate quality. Roots has two types of beef, beef from a blond d'aguitaine from Berkenhove farm. Or the organic mature cow Simmenthaler from the Lindenhoff farm. Roots has good contacts with the farmer does Beemster. He breeds and slaughter the lamb for us.
De Mariƫn Waerdt
You will find this Castle with her lands close to the Betuwe Linge (1129) This noble family grows organic products in small scale. When you a cheese plat (during drinking a beer if wine in the bas) you can order these cheeses. Ripened cheese with rocket pine nuts, ripened cheesewild garlic or chives. The also make plum chutney for our cheese dessert.
Fish from North Sea 
The Netherlands is fishing country. IJmuiden is our home harbour we are regular client at the dock. We run with all seasons. Zealand is famous with its oysters, mussels, prawns and periwinkles. But you can expect also graylings and tongues from the North Sea. When you choose our fishstarter, you will find the Dutch seafood. So there is always a collection of fresh fish.
