Roots’ menu has a set part and a changing seasonal part.  The seasonal menu changes every two weeks. Every dish is homemade, even the bread and mayonais is homemade. We cook in a traditional wood oven.

 

The hunting season has started

Why buy ingredients from far away when we have these amazing products in our backyard. That is the basic philosophy of Roots. Between Amsterdam and Muiden lies Aetsveld. The hunter

Cor has a hunter's insurance office in Weesp, in the morning before opening his business, he takes us to the chase. In the field are mainly rabbits and ducks. Chef Danny is especially interested in the duck.

 

 

 

 

 

 

 

'urbanized'

We find that we ourselves quite 'urbanized' are. We stand with our beautiful shoes in swampy muck. The grassland is wet we have many hurdles such as small bars of ditches. But nature is stunning, we really need to get more out of town!

If you associate the Netherlands, you think of its lakes, rivers and of course ducks. In terms of climate and nature, we are the ideal duck country.

Good cooking

Good cooking starts with the best ingredients, which come exclusively from the Netherlands. Roots supports this small-scale farmers who go for quality rather than quantity. We have a fixed menu with our famous classics. We experiment with our two weekly changing menu. Netherlands has so many great products to offer. Beautiful fish from the Wadden Sea, North Sea and IJsselmeer. Texel lamb, piglet from Kootwijk or Dikbilcow from the Amsterdampolder. Dutchies have a centuries-old history when it comes to chickens. Organic North Holland Blue find only us on the menu, a centuries old breed, and we fill this a farce and grill it on the the open flame grill in the middle of the restaurant. But how about an exclusive cheese board, with only exclusive Dutch cheeses. They come from small farmers from Zeeland to Groningen, served on an antique plate of Delfsblue. Roots has so many friends in the Netherlands, we can talkk hours at the table where with you. But it's better to taste it. Organic products, not a idealism.

Most products are organic, that has nothing to do with idealism, only with the taste. So no fertilizers and toxic substances, just the best quality.
